- 1 packet low-sodium taco seasoning
- 1 cup diced tomatoes with green chilies
- 1/2 cup beef broth
- 1 cup canned black beans, rinsed and dried
- 10–12 hard corn taco shells
- 2 cups freshly shredded cheddar cheese
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Drain excess grease from the skillet.
- Add taco seasoning and stir for 1 minute.
- Pour in diced tomatoes and beef broth, then bring to a simmer.
- Cook for about 5 minutes until the liquid reduces.
- Preheat oven to 400°F.
- Arrange taco shells upright in a baking dish.
- Add a small layer of black beans to each shell.
- Spoon beef mixture evenly into each taco shell.
- Top generously with shredded cheddar cheese.
- Bake uncovered for 10 minutes until cheese is melted and bubbly.
- Remove from oven and serve immediately.
Notes
For extra crispy shells, pre-bake empty taco shells for 3 minutes before filling. Keep beef mixture thick to avoid soggy tacos. Mix cheddar with Monterey Jack for a creamier melt and richer flavor.
