The Bang Bang Chicken Bowl is a colorful, flavor-packed dinner that combines tender, marinated chicken with a creamy sweet-and-spicy sauce, fresh vegetables, and fluffy rice. Inspired by Hawaiian poke bowls with a bold fusion twist, it’s perfect for weeknight meals, meal prep, or family dinners.

- 1 lb boneless, skinless chicken breast or thighs
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 cups cooked jasmine rice (or brown rice/quinoa)
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1/2 cup diced mango
- 1/2 cup edamame
- 2 tablespoons sesame seeds
- 2 green onions, chopped
- 1/2 cup mayonnaise
- 2–3 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey (for sauce)
- 1 tablespoon lime juice
Instructions
- Cook your chosen grain (rice, quinoa, or cauliflower rice) according to package instructions.
- In a bowl, mix soy sauce, garlic, sesame oil, and honey. Add chicken and marinate for 15 minutes.
- Heat a skillet or grill pan over medium-high heat. Cook chicken until golden and fully cooked, about 4–5 minutes per side. Remove and slice.
- In a small bowl, whisk together mayonnaise, sriracha, honey, and lime juice to make Bang Bang sauce.
- Assemble bowls by layering rice, chicken, avocado, cucumber, mango, and edamame.
- Drizzle with Bang Bang sauce and garnish with sesame seeds and green onions.
Notes
For a lighter version, use cauliflower rice or fresh greens as the base. Adjust spice level in the sauce to taste, or swap sriracha for sweet chili sauce for a milder flavor.
