Description

  • 24 oz (680g) full-fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 1/4 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Line an 8-inch springform pan with crumpled parchment paper, allowing it to extend above the edges.
  3. Beat the cream cheese until completely smooth.
  4. Gradually add the sugar and continue mixing until fully combined.
  5. Mix in the heavy whipping cream and vanilla extract.
  6. Lightly beat the eggs and add them one at a time, mixing gently after each addition.
  7. Add the flour and mix just until the batter is smooth and silky.
  8. Pour the batter into the prepared pan and gently tap the pan on the counter to remove air bubbles.
  9. Bake for 45–55 minutes, or until the top is deeply caramelized and the center is still slightly jiggly.
  10. Cool completely at room temperature, then refrigerate overnight before serving.

Notes

Always use room-temperature ingredients for the smoothest batter. Do not overmix or overbake—the center should still jiggle slightly when removed from the oven. Chilling overnight improves both the texture and flavor.
