- 24 oz (680g) full-fat cream cheese, room temperature
- 1 cup granulated sugar
- 4 large eggs, room temperature
- 1 1/4 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 425°F (220°C).
- Line an 8-inch springform pan with crumpled parchment paper, allowing it to extend above the edges.
- Beat the cream cheese until completely smooth.
- Gradually add the sugar and continue mixing until fully combined.
- Mix in the heavy whipping cream and vanilla extract.
- Lightly beat the eggs and add them one at a time, mixing gently after each addition.
- Add the flour and mix just until the batter is smooth and silky.
- Pour the batter into the prepared pan and gently tap the pan on the counter to remove air bubbles.
- Bake for 45–55 minutes, or until the top is deeply caramelized and the center is still slightly jiggly.
- Cool completely at room temperature, then refrigerate overnight before serving.
Notes
Always use room-temperature ingredients for the smoothest batter. Do not overmix or overbake—the center should still jiggle slightly when removed from the oven. Chilling overnight improves both the texture and flavor.
