Description

This Cajun Potato Soup is a spicy, creamy, and comforting southern dinner favorite. With tender potatoes, smoky andouille sausage, and a rich, flavorful broth, it’s the perfect balance of heat, creaminess, and hearty comfort. Ideal for weeknights when you want something homemade and satisfying.


Ingredients

  • 1 pound smoked andouille sausage, sliced (or smoked beef sausage)
  • 4 large russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 celery stalks, diced
  • 1 green bell pepper, chopped
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 tablespoons Cajun seasoning
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pot, sauté onion, celery, and bell pepper for 4-5 minutes until softened. Add minced garlic and cook for 1 minute.
  3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
  4. Stir in Cajun seasoning, salt, and pepper to taste.
  5. Add heavy cream and return sausage to the pot. Simmer for 10 minutes, stirring occasionally until slightly thickened.
  6. Optional: Stir in shredded cheddar cheese until melted and creamy.
  7. Serve hot with crusty bread or cornbread. Garnish with green onions or smoked paprika if desired.

Notes

For a milder version, reduce the Cajun seasoning or replace it with smoked paprika. To make it gluten-free, use certified gluten-free sausage and seasoning. Store leftovers in the fridge for up to 4 days or freeze before adding the cream for longer storage.
