Description

These Soft & Chewy Caramel Apple Cookies capture the essence of fall baking  warm cinnamon, caramel drizzle, and tender apple chunks wrapped in a buttery cookie dough. Perfectly chewy in the center and golden around the edges, they’re an irresistible Thanksgiving or autumn treat.


Ingredients

  • 2 cups diced Granny Smith or Honeycrisp apples
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3/4 cup unsalted butter, browned and cooled
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg + 1 yolk
  • 2 teaspoons vanilla extract
  • Optional: Caramel drizzle (store-bought or homemade)

Instructions

  1. Prepare the Apples: Peel and dice apples. In a saucepan, melt butter and add apples, brown sugar, and cinnamon. Cook over medium heat until tender and lightly caramelized. Let cool completely.
  2. Mix the Dry Ingredients: In a large bowl, whisk together flour, baking soda, salt, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, whisk browned butter, brown sugar, granulated sugar, egg, and vanilla until smooth.
  4. Form the Dough: Gradually add dry ingredients to wet mixture. Stir until just combined, then gently fold in cooled apple mixture.
  5. Chill: Cover and chill dough for at least 30 minutes for chewy texture.
  6. Bake: Preheat oven to 350°F (175°C). Scoop tablespoon-sized dough balls onto parchment-lined baking sheets. Bake 12–15 minutes until edges are golden and centers soft.
  7. Drizzle with Caramel: Once cooled, drizzle with warm caramel sauce for the perfect finishing touch.

Notes

Use firm apples like Granny Smith or Honeycrisp for best results. Chilling the dough ensures thick, chewy cookies. Store in an airtight container for up to 4 days, or freeze dough balls for up to 2 months.
