Description

This viral Carrot Salad is fresh, crunchy, colorful, and full of bold flavor. Made with carrot ribbons, a sweet tangy dressing, herbs, and sesame seeds, it is a quick no cook recipe perfect as a healthy side, light dinner, or vibrant meal prep option.


Ingredients

  • 4 large fresh carrots
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil
  • 2 tablespoons fresh parsley or cilantro, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Wash and peel the carrots.
  2. Use a vegetable peeler to slice the carrots into long, thin ribbons.
  3. Place the carrot ribbons in a large mixing bowl.
  4. In a small bowl, whisk together olive oil, rice vinegar, lime juice, honey, soy sauce or tamari, and sesame oil.
  5. Pour the dressing over the carrot ribbons.
  6. Gently toss until the carrots are evenly coated.
  7. Add fresh parsley or cilantro and sesame seeds.
  8. Toss lightly again to combine.
  9. Let the salad rest for a few minutes before serving so the flavors blend.
