Ingredients
2 cups cooked shredded chicken
2 tablespoons butter
2 cloves garlic minced
1 small onion diced
1 cup diced carrots
1 cup peas
2 cups chicken broth
1 cup milk or cream
1 cup shredded cheddar cheese
1/4 cup flour
Salt and pepper to taste
1 package garlic cheddar biscuit mix or homemade biscuit dough
Instructions
1. Preheat oven to 375 degrees Fahrenheit
2. Melt butter in a skillet over medium heat then sauté garlic and onion until soft
3. Add carrots and peas then cook for a few minutes until slightly tender
4. Stir in flour and cook for one minute while mixing well
5. Slowly pour in chicken broth and milk while stirring until the sauce thickens
6. Add shredded chicken and season with salt and pepper then mix well
7. Transfer the mixture into a baking dish evenly
8. Prepare the biscuit dough and spoon it over the top of the chicken mixture
9. Bake for 20 to 25 minutes until the biscuits are golden brown
10. Let cool slightly before serving
Notes
Use rotisserie chicken for a quicker preparation
Add extra cheese on top for a richer flavor
Store leftovers in the fridge for up to three days
