- 1 clove garlic, halved

- 1 tablespoon cornstarch or flour
- 1 tablespoon water
- Pinch of nutmeg

Instructions
- Grate all cheeses and toss them with cornstarch until evenly coated.
- Rub the inside of a fondue pot with the halved garlic clove.
- Add wine or grape juice and lemon juice to the pot and heat gently until simmering.
- Gradually add cheese in small handfuls, stirring constantly until fully melted and smooth.
- Season with nutmeg and black pepper to taste.
- Transfer to a fondue stand over low heat and serve immediately with desired dippers.
Notes
Use high-quality cheese for the smoothest texture. Keep the heat low at all times to prevent separation, and stir gently in one direction. If the fondue thickens, add a splash of warm liquid to loosen it.
