  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until fragrant.
  3. Add ground beef and cook until browned. Season with salt, pepper, and paprika.
  4. Stir in diced potatoes and cook for about 5 minutes until slightly tender.
  5. In a small bowl, whisk together sour cream and milk.
  6. Add the sour cream mixture to the skillet and stir to combine.

  8. Bake uncovered for 25–30 minutes or until potatoes are soft and the top is golden and bubbly.
