  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream (or substitute with coconut cream for a dairy-free option)
  • 1 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  2. In the same skillet, melt butter and sauté garlic until aromatic, about 30 seconds. Add chicken broth and deglaze the pan. Stir in cream and Parmesan, simmering for 3-5 minutes to thicken the sauce.
  3. Add spinach to the skillet and stir until wilted, about 2-3 minutes. Return chicken to the skillet and simmer for another 5-7 minutes.

Notes

Fresh spinach is best, but frozen spinach can be used if thawed and drained. For a lighter version, use half-and-half or coconut cream. Adjust cream and Parmesan to taste for a richer sauce.
