- 4 cloves garlic, minced
- 1/2 cup chicken broth

- 1 cup grated Parmesan cheese
- 4 cups fresh spinach
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until aromatic, about 30 seconds. Add chicken broth and deglaze the pan. Stir in cream and Parmesan, simmering for 3-5 minutes to thicken the sauce.
- Add spinach to the skillet and stir until wilted, about 2-3 minutes. Return chicken to the skillet and simmer for another 5-7 minutes.
- Garnish with fresh parsley and serve over pasta, rice, or roasted vegetables.
Notes
Fresh spinach is best, but frozen spinach can be used if thawed and drained. For a lighter version, use half-and-half or coconut cream. Adjust cream and Parmesan to taste for a richer sauce.
