  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 can (14 oz) fire-roasted tomatoes
  • 4 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups cooked shredded chicken (rotisserie works great)
  • Salt and pepper, to taste
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Crispy tortilla strips for serving
  • Optional toppings: avocado slices, shredded cheddar cheese, sour cream, jalapeños

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and fragrant.
  2. Stir in minced garlic, cumin, chili powder, and smoked paprika. Sauté for 1 minute to bloom the spices.
  3. Add fire-roasted tomatoes and chicken broth. Stir well and bring to a gentle boil, then reduce to a simmer.
  4. Add black beans, corn, and shredded chicken. Simmer for 15–20 minutes until the soup thickens slightly.
  5. Season with salt, pepper, and lime juice. Stir in fresh cilantro just before serving.
  6. Ladle soup into bowls and top with crispy tortilla strips, avocado slices, cheese, and sour cream.
  7. Serve hot with extra lime wedges for brightness.

Notes

For extra richness, blend one cup of soup and stir it back in. To make it creamy, add a splash of cream or coconut milk. Store leftovers for up to 4 days in the fridge or freeze for up to 2 months.
