Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 can (14 oz) fire-roasted tomatoes
- 4 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 2 cups cooked shredded chicken (rotisserie works great)
- Salt and pepper, to taste
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- Crispy tortilla strips for serving
- Optional toppings: avocado slices, shredded cheddar cheese, sour cream, jalapeños
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and fragrant.
- Stir in minced garlic, cumin, chili powder, and smoked paprika. Sauté for 1 minute to bloom the spices.
- Add fire-roasted tomatoes and chicken broth. Stir well and bring to a gentle boil, then reduce to a simmer.
- Add black beans, corn, and shredded chicken. Simmer for 15–20 minutes until the soup thickens slightly.
- Season with salt, pepper, and lime juice. Stir in fresh cilantro just before serving.
- Ladle soup into bowls and top with crispy tortilla strips, avocado slices, cheese, and sour cream.
- Serve hot with extra lime wedges for brightness.
Notes
For extra richness, blend one cup of soup and stir it back in. To make it creamy, add a splash of cream or coconut milk. Store leftovers for up to 4 days in the fridge or freeze for up to 2 months.
