Ingredients
- 200g digestive biscuits or Oreos (for base)
- 2 tablespoons cocoa powder (optional, for base)
- 100g unsalted butter, melted
- 200g dark chocolate, melted
- 500g full-fat cream cheese
- 100g sugar
- 300ml double cream
- 100g dark chocolate (for ganache)
- 100ml double cream (for ganache)
- 50g white chocolate (for spiderweb decoration)
Instructions
- Crush biscuits into fine crumbs, mix with cocoa powder and melted butter, then press into the bottom of an 8-inch springform tin. Chill for 30 minutes.
- Melt dark chocolate and let cool slightly. Beat cream cheese and sugar until smooth. Mix in melted chocolate.
- Whip double cream to soft peaks and fold gently into chocolate mixture. Pour over chilled base and refrigerate for at least 6 hours or overnight.
- Heat cream for ganache until steaming, pour over chopped dark chocolate, and stir until silky. Spread evenly on top of cheesecake.
- Melt white chocolate, pipe concentric circles over ganache, and drag a toothpick from the center outward to create a spiderweb effect. Chill until ready to serve.
Notes
For a dramatic Halloween look, use Oreos or black cocoa powder in the base. Always use full-fat cream cheese for the best texture. This cheesecake can be made a day in advance for deeper flavor.
