Instructions
- Combine warm water, honey, and yeast in a bowl. Let it rest until foamy.
- Add flour and salt, then knead until smooth and elastic (about 8–10 minutes).
- Cover the dough and let it rise for 1 hour or until doubled in size.
- Divide dough into equal pieces and shape into balls. Poke a hole in the center and stretch gently.
- In a large pot, bring water, baking soda, and sugar to a boil. Boil each bagel for 30 seconds per side, then remove and drain.
- Brush boiled bagels with melted butter, then sprinkle the cinnamon and brown sugar mixture evenly over the tops.
- Place bagels on a parchment-lined baking sheet and bake at 425°F (220°C) for 18–20 minutes until golden brown.
