Ingredients
- 1 cup chopped pecans or almonds
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons water
- 1 1/2 cups semi-sweet chocolate chips
- 1/4 cup additional chopped nuts
- Flaked sea salt (optional)
Instructions
- Line a 9×13-inch pan with parchment paper and scatter chopped nuts evenly across the bottom. Lightly toast them in a warm oven for about 5 minutes.
- In a heavy saucepan, melt butter, sugar, salt, and water over medium heat. Stir constantly until sugar dissolves.
- Once the mixture begins to boil, stop stirring and cook until it reaches 300°F (hard crack stage) using a candy thermometer.
- Quickly pour the caramel mixture over the toasted nuts. Sprinkle chocolate chips on top and let sit for 2 minutes to melt.
- Spread the melted chocolate evenly with a spatula and sprinkle with extra nuts or flaked sea salt.
- Cool at room temperature for 15 minutes, then refrigerate for 3–4 hours until set.
- Lift from the pan, break or cut into pieces, and serve or package as gifts.
Notes
For best results, use a candy thermometer to monitor temperature. Avoid stirring after the sugar dissolves to prevent crystallization. Store in an airtight container for up to two weeks or freeze for up to two months. Perfect for gifting or holiday dessert trays.
