Description

These Cottage Cheese Egg Bites are fluffy, high-protein breakfast bites that you can make ahead for busy mornings. They’re baked, not fried making them light, low-carb, and gluten-free. Customizable with your favorite mix-ins like spinach, feta, or roasted veggies, these egg bites are nutritious, satisfying, and perfect for meal prep.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup chopped spinach or kale
  • 1/4 cup diced bell peppers
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: chopped cooked beef or feta cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin or use silicone molds.
  2. In a blender, combine eggs, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and creamy.
  3. Pour the mixture into a bowl and fold in spinach, bell peppers, cheese, and optional mix-ins like beef or feta.
  4. Fill muffin cups about three-quarters full to allow room for puffing during baking.
  5. Bake for 20–25 minutes, or until centers are set and tops are lightly golden.
  6. Let cool for a few minutes before removing from the tin.
  7. Serve warm or refrigerate for up to 4 days. Reheat in the microwave for 20–30 seconds or enjoy cold on the go.

Notes

You can customize these egg bites with different flavor variations try Mediterranean (spinach + feta), roasted vegetable, or spicy versions. To freeze, place cooled bites on a baking sheet for 1 hour, then transfer to a freezer-safe container. Reheat directly from frozen in the microwave for 60–90 seconds.
