Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup chopped spinach or kale
- 1/4 cup diced bell peppers
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: chopped cooked beef or feta cheese
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin or use silicone molds.
- In a blender, combine eggs, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and creamy.
- Pour the mixture into a bowl and fold in spinach, bell peppers, cheese, and optional mix-ins like beef or feta.
- Fill muffin cups about three-quarters full to allow room for puffing during baking.
- Bake for 20–25 minutes, or until centers are set and tops are lightly golden.
- Let cool for a few minutes before removing from the tin.
- Serve warm or refrigerate for up to 4 days. Reheat in the microwave for 20–30 seconds or enjoy cold on the go.
Notes
You can customize these egg bites with different flavor variations try Mediterranean (spinach + feta), roasted vegetable, or spicy versions. To freeze, place cooled bites on a baking sheet for 1 hour, then transfer to a freezer-safe container. Reheat directly from frozen in the microwave for 60–90 seconds.
