Description

This Cottage Cheese Flatbread is a simple, wholesome, and satisfying option perfect for a healthy lunch. Made with just cottage cheese and eggs, it’s naturally high in protein, low carb, gluten-free, and flourless. Soft, flexible, and versatile, it works beautifully as a wrap, sandwich base, or pizza crust while fitting perfectly into keto, diabetic-friendly, and clean-eating lifestyles.

Ingredients

Scale
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 large eggs
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon Italian seasoning or oregano
  • Nonstick spray or olive oil for the pan

Instructions

  1. Add cottage cheese and eggs to a blender or food processor and blend until completely smooth.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Lightly coat parchment with nonstick spray or olive oil.
  4. Pour the blended mixture onto the baking sheet and spread evenly into a round or rectangle about 1/4-inch thick.
  5. Bake for 30–35 minutes until edges are lightly golden and the center is set.
  6. Cool for 5–10 minutes before slicing, serving, or adding toppings.

Notes

For best results, blend until completely smooth to avoid lumps. Add herbs, spices, or a pinch of chili flakes for savory versions, or skip seasonings and add cinnamon for a sweet variation. This flatbread stores well in the fridge or freezer for easy meal prep.
