- 1 lb ground sausage
- 6 slices beef
- 8 large eggs
- 1 cup whole milk
- 1/2 cup sour cream
- 3 cups shredded cheddar cheese (divided)
- 1 bag (20 oz) frozen hash browns
- 1 onion, diced
- 1 bell pepper, diced
- 1 packet ranch seasoning mix
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a skillet, brown the sausage until cooked through. In a separate pan, cook beef until crispy. Set aside.
- In a large bowl, whisk together eggs, milk, sour cream, ranch seasoning, salt, and pepper.
- In another bowl, combine hash browns, sausage, beef, onions, peppers, and 1 1/2 cups cheddar cheese. Mix lightly.
- Spread mixture evenly into the prepared baking dish. Pour egg mixture over the top. Sprinkle with remaining cheese.
- Bake for 45–50 minutes, or until set and golden brown.
- Let rest for 10 minutes before slicing and serving.
