- 500 g boneless chicken breast, cut into strips
- 1 egg white
- 2 tbsp cornflour
- 1 tbsp all-purpose flour
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp soy sauce
- 1 tsp chili paste
- 2 tbsp vegetable oil for frying
- For the Sauce
- 2 tbsp vegetable oil
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 small onion, sliced
- 1 bell pepper, sliced (red or green)
- 2 tbsp tomato ketchup
- 1 tbsp chili garlic sauce
- 1 tbsp soy sauce
- 1 tsp vinegar
- 1 tsp sesame oil
- 1 tsp brown sugar
- 2 tbsp water
- Garnish (Optional)
- Spring onions, chopped
- Toasted sesame seeds
Instructions
- Marinate and Coat the Chicken: Mix chicken strips with egg white, cornflour, flour, soy sauce, salt, pepper, and chili paste. Let it rest for 10 minutes for tender and flavorful bites.
- Fry the Chicken: Heat oil in a pan and shallow-fry until golden and crispy. Drain on paper towels to keep crunchy.
- Prepare the Dragon Sauce: In the same pan, heat oil and sauté garlic and ginger until fragrant. Add onion and bell pepper, stir-fry for 2–3 minutes, then add ketchup, soy sauce, chili garlic sauce, vinegar, brown sugar, sesame oil, and water. Stir until thickened.
- Combine and Toss: Add fried chicken to the sauce and coat evenly. Garnish with sesame seeds and spring onions. Serve hot with rice or noodles.
Notes
For a lighter version, air fry the chicken at 180°C for 12–15 minutes. Adjust spice level by reducing chili paste or adding a touch of honey for sweetness.
