Description

  • 500 g boneless chicken breast, cut into strips
  • 1 egg white
  • 2 tbsp cornflour
  • 1 tbsp all-purpose flour
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp soy sauce
  • 1 tsp chili paste
  • 2 tbsp vegetable oil for frying
  • For the Sauce
  • 2 tbsp vegetable oil
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 small onion, sliced
  • 1 bell pepper, sliced (red or green)
  • 2 tbsp tomato ketchup
  • 1 tbsp chili garlic sauce
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp sesame oil
  • 1 tsp brown sugar
  • 2 tbsp water
  • Garnish (Optional)
  • Spring onions, chopped
  • Toasted sesame seeds

Instructions

  1. Marinate and Coat the Chicken: Mix chicken strips with egg white, cornflour, flour, soy sauce, salt, pepper, and chili paste. Let it rest for 10 minutes for tender and flavorful bites.
  2. Fry the Chicken: Heat oil in a pan and shallow-fry until golden and crispy. Drain on paper towels to keep crunchy.
  3. Prepare the Dragon Sauce: In the same pan, heat oil and sauté garlic and ginger until fragrant. Add onion and bell pepper, stir-fry for 2–3 minutes, then add ketchup, soy sauce, chili garlic sauce, vinegar, brown sugar, sesame oil, and water. Stir until thickened.
  4. Combine and Toss: Add fried chicken to the sauce and coat evenly. Garnish with sesame seeds and spring onions. Serve hot with rice or noodles.

Notes

For a lighter version, air fry the chicken at 180°C for 12–15 minutes. Adjust spice level by reducing chili paste or adding a touch of honey for sweetness.
