Description

Easy Chicken Stroganoff is a comforting, Russian-inspired dish made with tender chicken, earthy mushrooms, and a creamy, flavorful sauce. Served over pasta, rice, or egg noodles, it’s a hearty yet simple meal that’s perfect for weeknights or meal prep. This lighter version swaps beef for chicken without losing any of the cozy, homestyle flavor.

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into strips
  • 2 tablespoons olive oil
  • 8 oz mushrooms (cremini or button), sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked pasta, rice, or egg noodles for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear chicken strips until golden brown, then remove and set aside.
  2. In the same skillet, sauté onions and mushrooms until softened and caramelized. Add garlic and cook for 1 minute.
  3. Sprinkle flour over vegetables, stir well, and slowly add chicken broth while whisking to form a smooth sauce.
  4. Reduce heat to low and stir in sour cream (or Greek yogurt), paprika, and Dijon mustard until creamy.
  5. Return chicken to the pan, coat with sauce, and simmer until chicken is fully cooked.
  6. Season with salt and pepper to taste, garnish with parsley, and serve over pasta, rice, or egg noodles.

Notes

For a lighter option, use Greek yogurt instead of sour cream. Add spinach, peas, or fresh herbs for extra flavor. To make in a slow cooker, add all ingredients (except sour cream) and cook on low for 6–7 hours, stirring in cream before serving.
