Description

This Pumpkin French Toast Breakfast is a cozy, fall-inspired morning treat featuring warm spices, pumpkin puree, and a drizzle of maple syrup. It’s simple, delicious, and fills your home with the comforting scent of autumn. Perfect for brunch or an easy weekday breakfast!

Ingredients

Scale
  • 6 thick slices of brioche or challah bread (stale or day-old works best)
  • 3 large eggs
  • 1 cup milk or dairy-free alternative
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons brown sugar (optional for extra sweetness)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 2 tablespoons butter or coconut oil for cooking
  • Maple syrup for serving
  • Optional toppings: chopped pecans, whipped cream, powdered sugar, or pumpkin maple syrup drizzle

Instructions

  1. In a large mixing bowl, whisk together eggs, milk, pumpkin puree, vanilla, cinnamon, nutmeg, cloves, and salt until smooth.
  2. Let the mixture sit for 5 minutes to allow flavors to blend.
  3. Dip each slice of bread into the mixture, letting it soak briefly on both sides without becoming soggy.
  4. Heat a nonstick skillet or griddle over medium heat and melt butter or coconut oil.
  5. Place soaked bread slices onto the skillet and cook each side for 2–3 minutes until golden brown.
  6. Repeat until all slices are cooked and beautifully golden.
  7. Stack the French toast on a plate, drizzle with maple syrup, and add your favorite toppings like whipped cream or chopped pecans.

Notes

Use slightly stale bread for the perfect texture. Substitute milk and butter with plant-based alternatives for a dairy-free version. For a crisp finish, bake the slices briefly after pan-frying. Serve with warm apple cider or fresh fruit for a complete fall breakfast.
