- 2 cups whole wheat flour (or gluten-free flour blend)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup unsweetened applesauce
- 1/2 cup milk (dairy or non-dairy)
- 2 large eggs (or flaxseed egg substitute)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups diced fresh apples (Honeycrisp, Fuji, or Pink Lady)
- Optional: 1/2 cup rolled oats, chopped nuts, or raisins
Instructions
- Preheat oven to 350°F (180°C) and line a muffin tin with paper liners or lightly grease.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine applesauce, milk, eggs, honey or maple syrup, and vanilla extract.
- Fold wet ingredients into dry ingredients gently until just combined.
- Gently fold in diced apples and any optional add-ins.
- Divide batter evenly into muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra moist muffins, use applesauce and avoid overbaking. Store at room temperature for 2 days, in the fridge for up to 1 week, or freeze for up to 3 months.
