  • 2 ripe tomatoes, pureed
  • 1 cup full-fat coconut milk
  • 1 tablespoon ginger garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions

  1. Heat oil in a deep pan over medium heat.
  2. Add chopped onions and sauté until golden brown to create a rich base.
  3. Stir in ginger garlic paste and cook briefly, ensuring it doesn’t burn.
  4. Add turmeric, chili powder, cumin, and coriander; sauté for a few seconds until fragrant.
  5. Mix in the tomato puree and cook until the oil separates from the mixture.
  6. Pour in coconut milk and stir well. Let the curry sauce simmer gently for 5–7 minutes.
  7. Season with salt and add lemon juice for brightness.
  8. Gently add fish pieces and simmer for 4–5 minutes until just cooked through.
  9. Turn off the heat and garnish with fresh cilantro before serving.
  10. Serve hot with steamed rice or soft flatbread for a comforting meal.

Notes
