Description

Learn how to make the best fluffy pancakes from scratch with this easy, foolproof recipe using simple pantry staples for light, pillowy pancakes!

Ingredients

Scale

2 cups of premium all-purpose flour

3 teaspoons of active baking powder

2 tablespoons of granulated sugar

1/2 teaspoon of fine sea salt

1 1/2 cups of whole milk at room temperature

1 large egg at room temperature

4 tablespoons of unsalted butter, melted and slightly cooled

2 teaspoons of pure vanilla extract

Instructions

1. Whisk the dry ingredients (flour, baking powder, sugar, fine sea salt) together in a large mixing bowl for thirty seconds to introduce air.

2. Combine the wet ingredients (whole milk, large egg, melted butter, vanilla extract) at room temperature in a separate bowl.

3. Pour the wet ingredients into the dry ingredients well and gently mix with a silicone spatula, leaving plenty of lumps.

4. Let the pancake batter rest undisturbed on your kitchen counter for ten minutes to fully activate the baking powder and relax the gluten.

5. Cook on a nonstick skillet or griddle over medium heat (325°F to 350°F) for two to three minutes until bubbles form and pop on the surface.

6. Flip in one swift, gentle motion and cook the second side for another one to two minutes until golden brown.

Notes

Room Temperature Ingredients: Always ensure your milk and egg are at room temperature to prevent the melted butter from solidifying.

Don’t Overmix: Stop mixing while there are still plenty of lumps visible to prevent gluten development and keep the pancakes tender.

Keep Warm: Keep cooked pancakes in a single layer on a wire rack inside an oven preheated to 200°F.
