Description

  • 2 tablespoons butter

  • 2 garlic cloves, minced

  • 1 tablespoon tomato paste
  • 1/2 cup dry red wine or sherry
  • 4 cups beef stock or vegetable broth
  • 1 bay leaf
  • 1 parsley sprig
  • 1 teaspoon thyme
  • 1/2 teaspoon Worcestershire sauce
  • 1 pound potato gnocchi
  • Salt and pepper to taste
  • 1 cup shredded Gruyère, Swiss, or Parmesan cheese

Instructions

  1. In a large pot or Dutch oven, heat butter and olive oil over medium-low heat. Add onions and cook slowly, stirring occasionally.
  2. After 20 minutes, add brown sugar and continue cooking until onions are deep golden and caramelized.
  3. Stir in garlic, tomato paste, and flour. Cook for 1 minute to form a light roux.
  4. Pour in red wine or sherry, scraping the bottom of the pot to deglaze.
  5. Add broth, thyme, parsley, bay leaf, and Worcestershire sauce. Simmer gently for 15 minutes.
  6. Add gnocchi directly into the pot and cook until they float and become tender.
  7. Ladle soup into oven-safe bowls, top with cheese, and broil until bubbling and golden brown.
  8. Serve hot and enjoy with crusty bread or a side salad.

Notes

For a vegetarian version, use vegetable broth and omit Worcestershire sauce. To make it vegan, substitute butter and cheese with plant-based options. Use gluten-free gnocchi and cornstarch instead of flour for a gluten-free variation. Caramelize onions slowly for the richest flavor.
