- 1 bag beef meatballs, fresh or frozen
- 1 cup long grain rice
- 1 can condensed French onion soup
- 2 cups beef broth
- 1 large onion, sliced
- 1 cup mushrooms, sliced
- 2 garlic cloves, minced
- 2 tablespoons butter
- 1 cup shredded Swiss or provolone cheese
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 375°F.
- In a skillet, melt butter and sauté onions, mushrooms, and garlic until soft and golden.
- In a large baking dish, combine rice, beef broth, and condensed French onion soup.
- Add the sautéed onion and mushroom mixture and stir well.
- Place the meatballs evenly on top of the rice mixture.
- Cover tightly with aluminum foil and bake for 45 minutes or until the rice is tender.
- Remove foil and sprinkle shredded cheese over the top.
- Return to the oven uncovered for 10 minutes until the cheese is melted and golden.
- Let rest for a few minutes before serving warm.
Notes
For extra flavor, use Gruyere cheese instead of Swiss or provolone. Add a splash of beef broth while reheating leftovers to keep the rice moist and tender.
