Ingredients
- 2 large English cucumbers, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cup fresh mozzarella balls (or mozzarella slices)
- Fresh basil leaves, torn
- 3 tbsp olive oil
- 1 ½ tbsp balsamic vinegar
- 1 tsp honey (optional)
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Slice cucumbers and tomatoes, then arrange them in a serving bowl.
- Add thin slices of onion and scatter basil leaves.
- Toss in mozzarella balls or slices.
- Drizzle with the dressing, toss gently, and let it sit for 5 minutes before serving.
Notes
For best results, use English or Persian cucumbers for crunch and sweetness. Drain mozzarella well before adding to avoid excess moisture. Keep cucumbers and tomatoes separate if prepping ahead and add dressing just before serving.
