Description

This Frito Corn Salad is creamy, crunchy, and packed with colorful vegetables, sweet corn, cheddar cheese, and crispy Fritos. It’s an easy crowd-pleasing side dish that comes together in minutes and is perfect for potlucks, barbecues, picnics, and family dinners.


Ingredients

  • 2 cups whole kernel corn, drained (or fresh/frozen corn)
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely diced red onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 3/4 cup mayonnaise
  • 1 cup Fritos corn chips
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Drain the corn thoroughly to remove excess moisture.
  2. Dice the red onion and chop the green and red bell peppers.
  3. In a large mixing bowl, combine the corn, shredded cheddar cheese, diced onion, and chopped peppers.
  4. Add the mayonnaise and stir gently until all ingredients are evenly coated.
  5. Season with salt and black pepper to taste.
  6. Cover and refrigerate until ready to serve for the best flavor.
  7. Just before serving, fold in the Fritos corn chips to keep them crispy.
  8. Serve immediately and enjoy.

Notes

For the best texture, always add the Fritos just before serving. The salad base can be made several hours ahead and refrigerated. Use fresh corn when in season for extra sweetness, or substitute part of the mayonnaise with plain Greek yogurt for a lighter version.
