  • 1 whole turkey (1416 lbs)
  • 1 onion, quartered
  • 1 lemon, halved
  • 1 orange, halved
  • 1 head garlic, halved crosswise
  • Kosher salt and black pepper
  • Fresh herbs: rosemary, thyme, sage, parsley
  • 1 cup unsalted butter, softened
  • 6 garlic cloves, finely minced
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped thyme
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • Optional: Fresh herbs, onion, citrus slices, and garlic for stuffing

Instructions

  1. Thaw the frozen turkey in the refrigerator for 3–4 days before cooking (24 hours per 4 lbs).
  2. Let the turkey sit at room temperature for 1 hour before roasting.
  3. Pat dry with paper towels to ensure crispy skin.
  4. Season the cavity with kosher salt, black pepper, and aromatics. Insert onion, garlic, lemon, orange, and herbs inside.
  5. Tie legs together with kitchen twine and tuck wings under the body.
  6. In a bowl, combine softened butter, garlic, rosemary, thyme, parsley, lemon zest, salt, and pepper. Mix until smooth.
  7. Loosen the skin over the breast and thighs and spread the garlic herb butter under and over the skin.
  8. Preheat oven to 325°F. Place turkey breast-side up on a rack in a roasting pan.
  9. Roast uncovered for 2.5–3 hours, basting occasionally with melted butter or pan juices.
  10. Increase temperature to 425°F for the last 30 minutes for golden, crispy skin.
  11. Check internal temperature: breast 165°F, thigh 175°F.
  12. Remove and let rest 45–60 minutes before carving.
  13. Carve and serve garnished with herbs, citrus slices, and roasted garlic bulbs.

Notes

Always use a fully thawed turkey. Apply butter under and over the skin for deep flavor. Resting the turkey is essential for juicy meat. Tent with foil if browning too fast. Perfectly pairs with classic Thanksgiving sides like mashed potatoes or root vegetable gratin.
