Juicy chicken patties infused with Korea’s beloved spicy-sweet gochujang, topped with a tangy, smoky kimchi and beef jam. These Korean-inspired burgers bring together sweet, smoky, tangy, and spicy flavors for an unforgettable dinner.

- 1/2 cup diced beef
- 1/2 cup chopped kimchi
- 2 tablespoons grape juice
- 1 tablespoon brown sugar
- 1/2 teaspoon gochugaru (Korean chili flakes)
- 1 pound ground chicken
- 1/2 cup panko breadcrumbs
- 2 tablespoons gochujang
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 2 scallions, finely chopped
- 1 tablespoon soy sauce
- 4 burger buns, toasted
- 4 slices gouda cheese
- 1/2 cucumber, thinly sliced
- Fresh cilantro leaves, for garnish
Instructions
- In a skillet, cook diced beef until crisp. Add chopped kimchi, grape juice, brown sugar, and gochugaru. Simmer until thick and jammy. Set aside.
- In a large bowl, mix ground chicken, panko breadcrumbs, gochujang, garlic, ginger, scallions, and soy sauce until combined.
- Form into 4 patties. Pan-fry in a lightly oiled skillet over medium heat until golden and cooked through, or grill for a smoky flavor.
- Lightly toast burger buns. Place patties on buns, top with gouda cheese, kimchi beef jam, cucumber slices, and fresh cilantro.
- Serve hot with your favorite sides.
Notes
Adjust gochujang to taste for more or less spice. The kimchi beef jam can be made ahead and stored in the fridge for up to a week. Swap chicken for plant-based patties for a vegetarian version.
