Description
A smoky, fresh twist on the classic Caesar salad with charred romaine hearts, lemon-grilled chicken breast, garlic-rubbed baguette slices, and creamy Caesar dressing.
Ingredients
For the Chicken:
2 large chicken breasts, pounded to even thickness
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp honey
2 cloves garlic, minced
Juice of 1 lemon
Salt and pepper to taste
For the Salad:
3 romaine hearts, halved lengthwise
1 baguette, sliced on the diagonal
1 clove garlic, peeled
Olive oil for brushing
1 cup Caesar dressing (homemade or store-bought)
Parmigiano-Reggiano shavings
Grilled lemon halves for serving
Instructions
Combine soy sauce, fish sauce, honey, garlic, lemon juice, salt, and pepper in a bowl. Coat chicken and marinate for 30 minutes to 2 hours.
Preheat grill to high heat and oil grates. Grill chicken 4–5 minutes per side over direct heat until cooked through. Rest before slicing.
Brush baguette slices with olive oil and grill until golden. Rub with garlic.
Brush romaine hearts with olive oil and grill cut side down for 1–2 minutes until lightly charred.
Arrange grilled romaine on plates. Top with sliced chicken, grilled bread, Parmesan, and Caesar dressing.
Serve with grilled lemon halves for squeezing.
Notes
Dressing can be made up to 2 days ahead and stored in the fridge.
Chicken can be marinated in the morning and grilled at dinner time.
Grilled bread is best fresh; romaine can be grilled a few hours ahead and chilled until serving.
