- 1/3 cup maple syrup
- 1 teaspoon pumpkin spice or cinnamon
- Optional: 1/4 cup chocolate chips
- Optional: 1/4 cup chopped pecans or walnuts
- Optional: 1/4 cup raisins or dried cranberries
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix pumpkin puree and maple syrup until smooth.
- Add rolled oats and pumpkin spice. Stir until dough is sticky and thick.
- Fold in optional add-ins like chocolate chips, nuts, or raisins.
- Scoop spoonfuls of dough onto the baking sheet and gently flatten into cookie shapes.
- Bake for 12–15 minutes, or until edges are lightly golden.
- Allow cookies to cool slightly before enjoying.
Notes
For softer cookies, don’t overbake. Store in an airtight container for up to 3 days at room temperature or refrigerate for a week. These cookies also freeze well for longer storage.
