Ingredients
- 2 cups Kodiak pancake mix (or another protein-packed pancake mix)
- 1 lb ground beef sausage, cooked and crumbled
- 2 cups milk (Fairlife or another high-protein milk)
- 2 large eggs
- 1/4 cup pure maple syrup
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 400°F and lightly grease or line a muffin tin with paper liners.
- In a mixing bowl, combine pancake mix, milk, eggs, and maple syrup. Whisk until smooth.
- Stir in the cooked sausage and shredded cheddar cheese until evenly distributed.
- Divide the batter into the muffin cups, filling each about three-quarters full.
- Bake for 14–16 minutes, or until tops are golden brown and a toothpick comes out clean.
- Allow muffins to cool slightly before serving. Store leftovers in an airtight container or freeze for later.
Notes
