Description

These High-Protein Pancake Sausage Mini Muffins combine the warm comfort of pancakes, the savory richness of sausage, and melty cheddar cheese into a portable, protein-packed breakfast. Perfect for busy mornings, meal prep, or kid-friendly snacks, they’re customizable, freezer-friendly, and ready in under 30 minutes.

Ingredients

Scale
  • 2 cups Kodiak pancake mix (or another protein-packed pancake mix)
  • 1 lb ground beef sausage, cooked and crumbled
  • 2 cups milk (Fairlife or another high-protein milk)
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F and lightly grease or line a muffin tin with paper liners.
  2. In a mixing bowl, combine pancake mix, milk, eggs, and maple syrup. Whisk until smooth.
  3. Stir in the cooked sausage and shredded cheddar cheese until evenly distributed.
  4. Divide the batter into the muffin cups, filling each about three-quarters full.
  5. Bake for 14–16 minutes, or until tops are golden brown and a toothpick comes out clean.
  6. Allow muffins to cool slightly before serving. Store leftovers in an airtight container or freeze for later.

Notes

For a leaner version, substitute turkey or chicken sausage. Add chopped veggies like bell peppers, spinach, or zucchini for extra nutrition. Freeze muffins individually before bagging to prevent sticking.
