Description

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 cups powdered sugar
  • 23 tablespoons milk or plant-based milk
  • Food coloring (optional)

Instructions

  1. In a large bowl, cream together butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until combined.
  3. In another bowl, whisk together flour, baking powder, salt, and spices.
  4. Gradually combine wet and dry ingredients until a soft dough forms.
  5. Wrap dough in plastic wrap and chill for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out chilled dough on a lightly floured surface and cut into festive shapes (pumpkins, leaves, or acorns).
  8. Place cookies on the prepared baking sheet and chill again for 10 minutes to help maintain shape.
  9. Bake for 8–10 minutes or until edges are lightly golden.
  10. Cool completely before decorating with royal icing and sprinkles.

Notes

Chill your dough to prevent spreading and achieve perfect shapes. Use room-temperature butter for a smooth dough. For a twist, try maple glaze, add chopped nuts, or make them vegan or gluten-free with substitutions.
