Instructions
- Preheat oven to 325°F and line baking sheets with parchment paper.
- Beat butter, icing sugar, and vanilla until light and fluffy.
- Sift flour and salt together and gradually mix into the butter mixture until a soft dough forms.
- Wrap dough and chill for 30 minutes.
- Roll dough to 1/4-inch thickness and cut cookies using a round cutter, cutting a heart shape from half of them.
- Arrange cookies on baking sheets and bake for 15–20 minutes until lightly golden.
- Cool completely on a rack.
- Dust the cut-out cookies with icing sugar.
- Spread strawberry jam on the flat cookies and sandwich with the dusted tops.
