  • 2 tablespoons loose jasmine green tea or 3 jasmine tea bags
  • 2 tablespoons unflavored gelatin powder
  • 2 to 3 tablespoons natural sweetener of choice
  • 1 tablespoon fresh lemon juice (optional)
  • For vegan option: replace gelatin with 1 1/2 teaspoons agar agar powder

Instructions

  1. Brew Strong Jasmine Tea: Heat 2 cups of water until hot but not boiling. Add jasmine tea and steep for 5–7 minutes. Strain the leaves or remove tea bags.
  2. Bloom the Gelatin: Pour 1/2 cup of the warm tea into a bowl. Sprinkle gelatin evenly over the surface and let it sit for 5 minutes to bloom.
  3. Dissolve and Sweeten: Add the bloomed gelatin back into the saucepan with remaining tea. Heat gently, stirring until dissolved. Add sweetener and lemon juice, stirring well.
  4. For Agar Agar Option: Dissolve agar powder directly in hot tea and bring to a gentle simmer while stirring.
  5. Pour and Chill: Pour mixture into a mold or dish. Cool at room temperature, then refrigerate for 3–4 hours until set. Cut into cubes or slices before serving.

Notes
