Ingredients

- 1 cup crushed pineapple, well drained

- 1/2 cup cold water
Instructions
- Dissolve the sugar free strawberry gelatin powder in 1/2 cup of hot water according to package instructions.
- Allow the gelatin mixture to cool slightly but do not let it fully set.
- Place the cottage cheese into a large mixing bowl.
- Add the drained crushed pineapple and chopped strawberries to the bowl.
- Gently fold the fruit into the cottage cheese until evenly combined.
- Slowly pour the cooled gelatin mixture into the bowl.
- Stir gently until the gelatin is evenly distributed.
- Fold in the light whipped topping using slow circular motions.
- Transfer the mixture into a serving bowl or individual dessert cups.
- Refrigerate for at least 2 hours until the salad is chilled and set.
Notes
