Description

This jello cottage cheese salad is a light, creamy, and refreshing dessert that fits perfectly into a balanced lifestyle.   • 2 cups low fat cottage cheese
  • 1 small box sugar free strawberry gelatin powder
  • 1 cup crushed pineapple, well drained
  • 1 cup fresh strawberries, chopped
  • 1/2 cup light whipped topping
  • 1/2 cup cold water

Instructions

  1. Dissolve the sugar free strawberry gelatin powder in 1/2 cup of hot water according to package instructions.
  2. Allow the gelatin mixture to cool slightly but do not let it fully set.
  3. Place the cottage cheese into a large mixing bowl.
  4. Add the drained crushed pineapple and chopped strawberries to the bowl.
  5. Gently fold the fruit into the cottage cheese until evenly combined.
  6. Slowly pour the cooled gelatin mixture into the bowl.
  7. Stir gently until the gelatin is evenly distributed.
  8. Fold in the light whipped topping using slow circular motions.
  9. Transfer the mixture into a serving bowl or individual dessert cups.
  10. Refrigerate for at least 2 hours until the salad is chilled and set.

Notes

Make sure the fruit is well drained to prevent the salad from becoming watery. You can easily switch flavors by using orange gelatin with mandarin oranges or pineapple gelatin for a tropical twist. For a lighter variation, you can skip the whipped topping and whip the cottage cheese briefly for a smoother texture.
