- 1 pound ground beef
- 1 onion, diced
- 3 garlic cloves, minced
- 1 jar (24 oz) spaghetti sauce
- 12 no-boil lasagna noodles
- 2 cups ricotta cheese (or cottage cheese)
- 3 cups shredded mozzarella cheese, divided
- 1 cup grated parmesan cheese
- 2 teaspoons Italian herbs (basil, oregano)
- Salt and pepper to taste
- Optional: 2 cups spinach or zucchini slices
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
- Add spaghetti sauce to the beef mixture, season with Italian herbs, and let simmer for 10 minutes.
- In a bowl, mix ricotta cheese, parmesan, 1 1/2 cups mozzarella, salt, and pepper.
- Spread a thin layer of meat sauce in a 13×9 baking dish. Place noodles on top, followed by cheese mixture, then more sauce. Repeat layers until full, finishing with sauce and remaining mozzarella.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake another 10 minutes, until cheese is golden and bubbling.
- Let rest 10 minutes before slicing and serving.
Notes
This lasagna can be assembled up to 24 hours in advance or frozen for up to 3 months. For extra creaminess, mix mozzarella into the ricotta filling. Let the lasagna rest before serving to keep layers neat.
