Description

These Lasagna Roll Ups are the ultimate comfort food made easy. Rolled pasta filled with creamy ricotta, gooey mozzarella, savory meat or spinach, and topped with sauce and cheese — they’re portion-friendly, customizable, and perfect for dinner, meal prep, or freezing.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (optional, thawed & squeezed if frozen)
  • 1 lb ground beef or sausage (optional for meat version)
  • 3 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente. Drain and lay flat on parchment paper.
  3. In a bowl, mix ricotta, 1 1/2 cups mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper. Stir in spinach for vegetarian version or cooked ground beef/sausage for meat version.
  4. Spread a thin layer of filling evenly over each noodle.
  5. Roll each noodle tightly from one end to the other and place seam-side down in the baking dish.
  6. Pour marinara sauce evenly over the roll ups and sprinkle with remaining mozzarella cheese.
  7. Cover with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes until cheese is melted and bubbly.
  8. Let rest 5 minutes before serving.

Notes

Make-ahead friendly: Assemble up to 24 hours in advance and refrigerate. To freeze, assemble but don’t bake — cover tightly with foil and freeze up to 3 months. Bake directly from frozen with extra time.
