- 12 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach (optional, thawed & squeezed if frozen)
- 1 lb ground beef or sausage (optional for meat version)
- 3 cups marinara sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook lasagna noodles in salted boiling water until al dente. Drain and lay flat on parchment paper.
- In a bowl, mix ricotta, 1 1/2 cups mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper. Stir in spinach for vegetarian version or cooked ground beef/sausage for meat version.
- Spread a thin layer of filling evenly over each noodle.
- Roll each noodle tightly from one end to the other and place seam-side down in the baking dish.
- Pour marinara sauce evenly over the roll ups and sprinkle with remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes until cheese is melted and bubbly.
- Let rest 5 minutes before serving.
Notes
Make-ahead friendly: Assemble up to 24 hours in advance and refrigerate. To freeze, assemble but don’t bake — cover tightly with foil and freeze up to 3 months. Bake directly from frozen with extra time.
