Description

This Loaded Veggie White Lasagna is a healthy twist on tradition, layered with sautéed vegetables, creamy ricotta, mozzarella, Parmesan, and a luscious white béchamel sauce. Perfectly cheesy, wholesome, and indulgent without being heavy, it’s comfort food at its finest.


Ingredients

  • 12 lasagna noodles (regular or gluten-free)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 medium zucchinis, sliced thin
  • 2 cups mushrooms, sliced
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • Salt, pepper, and Italian seasoning to taste
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 4 cups milk
  • 1 teaspoon nutmeg
  • Salt and pepper to taste (for béchamel)

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions, drain, and set aside.
  2. Heat olive oil in a pan and sauté zucchini, mushrooms, spinach, and peppers until tender. Season with salt, pepper, and Italian herbs.
  3. Prepare the béchamel sauce: Melt butter in a saucepan, whisk in flour, and cook for 1 minute. Gradually add milk, whisking until smooth and thick. Season with nutmeg, salt, and pepper.
  4. Spread a thin layer of white sauce in a baking dish. Layer noodles, sautéed veggies, ricotta, mozzarella, and more sauce. Repeat layers until all ingredients are used, finishing with noodles, sauce, mozzarella, and Parmesan.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 20 minutes until bubbly and golden.
  6. Let rest for 10 minutes before slicing and serving.

Notes

Use fresh, seasonal vegetables for best flavor. Frozen spinach works but squeeze out water. Assemble a day ahead for convenience. Store leftovers up to 4 days and reheat in the oven for best results.
