Description

These Middle Eastern Salad Tacos combine crisp vegetables, warm spiced chickpeas, fresh herbs, and creamy hummus or tahini wrapped in soft tortillas. Packed with Mediterranean flavors, they are healthy, satisfying, and perfect for a quick vegan lunch or light dinner.


Ingredients

  • 2 cups cooked chickpeas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon sumac
  • Salt to taste
  • Black pepper to taste
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1 small red onion, finely sliced
  • 1 handful fresh parsley, chopped
  • 1 handful fresh mint, chopped
  • Juice of 1 lemon
  • 4 soft tortillas
  • 1/2 cup hummus or tahini sauce
  • Fresh scallions for garnish
  • Optional dukkah or zaatar topping

Instructions

  1. Heat olive oil in a frying pan over medium heat.
  2. Add chickpeas, cumin, paprika, sumac, salt, and pepper.
  3. Cook for 5 to 7 minutes until the chickpeas are warm and slightly crispy.
  4. In a large bowl, combine cucumber, tomatoes, red onion, parsley, and mint.
  5. Add lemon juice and toss well to create the fresh salad mixture.
  6. Warm the tortillas until soft and flexible.
  7. Spread hummus or tahini sauce on each tortilla.
  8. Add a layer of spiced chickpeas.
  9. Top with the cucumber tomato salad mixture.
  10. Garnish with scallions and optional dukkah or zaatar.
  11. Fold the tortillas and serve immediately.

Notes

Use fresh herbs for the best flavor and avoid overcooking the chickpeas. Store the salad and chickpeas separately if making ahead, then assemble just before serving to maintain freshness and texture.
