- 6 corn tortillas, cut into strips or triangles
- 6 large eggs
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 1 tomato, diced
- 1 jalapeño, sliced
- 1 bell pepper, diced
- 1 cup shredded cheddar cheese or queso fresco
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Salsa for serving
- Avocado slices for serving
Instructions
- Heat oil in a large skillet over medium heat.
- Add the tortilla strips and fry until golden and crispy, then remove and set aside.
- In the same skillet, sauté onion, tomato, jalapeño, and bell pepper until softened.
- Whisk the eggs in a bowl with salt and pepper.
- Pour the eggs into the skillet and cook gently, stirring slowly until soft and fluffy.
- Return the crispy tortillas to the skillet and fold them into the eggs.
- Sprinkle cheese over the mixture and let it melt slightly.
- Top with fresh cilantro and serve warm with salsa and avocado slices.
Notes
For extra flavor, add cooked chorizo or shredded chicken. Reheat leftovers in a skillet instead of the microwave to keep the tortillas from becoming soggy. Fresh salsa and avocado make the perfect finishing touch.
