Description

This never-soggy Dumpling Bake is the viral TikTok dinner done right. With crispy golden dumplings on top and a creamy coconut curry sauce underneath, it’s a one-pan comfort meal that’s high in protein, packed with flavor, and incredibly easy to make for busy weeknights.


Ingredients

  • 1 bag frozen chicken or vegetable dumplings
  • 1 can light coconut milk
  • 2 tablespoons Thai red curry paste
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon lime juice
  • 1 cup spinach or kale
  • 1/2 cup edamame
  • 1/2 cup sliced bell peppers
  • 1 teaspoon brown sugar
  • Fresh cilantro for garnish
  • Sliced green onions for garnish

Instructions

  1. Preheat oven to 400°F and lightly brush a baking dish with sesame oil.
  2. In a bowl, whisk coconut milk, curry paste, garlic, ginger, soy sauce, lime juice, and brown sugar until smooth.
  3. Add spinach, bell peppers, and edamame to the baking dish and spread evenly.
  4. Arrange frozen dumplings on top in a single layer, keeping the tops exposed.
  5. Pour the sauce around the dumplings without fully covering them.
  6. Cover with foil and bake for 20 minutes.
  7. Remove foil and bake uncovered for 10–12 minutes until dumplings are golden and crispy.
  8. Remove from oven, garnish with cilantro and green onions, and serve hot.

Notes

Do not thaw the dumplings before baking to avoid sogginess. Keep the tops exposed for crisp texture. Add chili crisp or extra curry paste if you prefer more heat.
