Ingredients

  • 4 large Vidalia or sweet onions
  • 3 tablespoons butter or olive oil
  • 1 tablespoon Old Bay seasoning or Cajun spice blend
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)
  • Aluminum foil for wrapping

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel onions and cut a small slice off the bottom so they sit flat.
  3. Cut a deep X into the top of each onion.
  4. Mix melted butter or olive oil with seasoning, garlic powder, paprika, salt, and pepper.
  5. Brush the mixture generously over and into the onions.
  6. Wrap each onion tightly in foil and place on a baking sheet.
  7. Roast for 30–35 minutes, unwrapping for the last 10 minutes for caramelization.
  8. Remove from oven, garnish with parsley, and serve warm.

Notes

Sweet onions work best for this recipe. For a vegan option, use olive oil instead of butter. Add extra Cajun seasoning or chili powder if you like heat.
