- 4 large Vidalia or sweet onions
- 3 tablespoons butter or olive oil
- 1 tablespoon Old Bay seasoning or Cajun spice blend
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
- Aluminum foil for wrapping
Instructions
- Preheat oven to 400°F (200°C).
- Peel onions and cut a small slice off the bottom so they sit flat.
- Cut a deep X into the top of each onion.
- Mix melted butter or olive oil with seasoning, garlic powder, paprika, salt, and pepper.
- Brush the mixture generously over and into the onions.
- Wrap each onion tightly in foil and place on a baking sheet.
- Roast for 30–35 minutes, unwrapping for the last 10 minutes for caramelization.
- Remove from oven, garnish with parsley, and serve warm.
Notes
Sweet onions work best for this recipe. For a vegan option, use olive oil instead of butter. Add extra Cajun seasoning or chili powder if you like heat.
