Ingredients

  • 8 oz flat rice noodles
  • 2 tablespoons vegetable oil
  • 1 chicken breast sliced (or shrimp/tofu)
  • 2 eggs
  • 2 garlic cloves minced
  • 1 cup bean sprouts
  • 2 green onions sliced
  • 1/4 cup crushed peanuts
  • 2 tablespoons tamarind paste
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Lime wedges for serving

Instructions

  1. Soak rice noodles in warm water until softened but still slightly firm.
  2. In a small bowl mix tamarind paste, soy sauce, brown sugar, and lime juice to make the sauce.
  3. Heat oil in a large skillet or wok over medium-high heat.
  4. Cook chicken until golden and fully cooked. If using shrimp, cook until pink.
  5. Push protein to one side of the pan and add garlic.
  6. Add eggs and stir gently until just set.
  7. Add softened noodles and pour in prepared sauce.
  8. Toss everything together until noodles absorb the flavors evenly.
  9. Add bean sprouts and green onions and stir briefly.
  10. Top with crushed peanuts and serve with fresh lime wedges.

Notes

Do not overcook the noodles because they will continue cooking in the pan. Taste and adjust the sauce before adding it to the noodles. For a vegetarian version, replace chicken with tofu and add extra vegetables.
