Ingredients

  • 2 cups mashed potatoes
  • 2 teaspoons chopped fresh parsley
  • Coarse salt and ground pepper to taste
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 ½ cups fresh breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Boil peeled potatoes until tender, then mash until smooth with salt, pepper, and butter. Let cool completely before shaping.
  2. Scoop about 2 tablespoons of mashed potato and roll into a ball or cylinder.
  3. Roll each croquette in flour, dip in egg wash, and coat with breadcrumbs. Repeat egg and breadcrumb steps for a thicker crust if desired.
  4. Heat oil to 350°F and fry croquettes for 3-4 minutes until golden brown. Drain on paper towels.

Notes
