Ingredients
- 2 cups mashed potatoes
- 2 teaspoons chopped fresh parsley
- Coarse salt and ground pepper to taste
- 1 cup all-purpose flour
- 1 large egg
- 1 ½ cups fresh breadcrumbs
- Vegetable oil for frying
Instructions
- Boil peeled potatoes until tender, then mash until smooth with salt, pepper, and butter. Let cool completely before shaping.
- Scoop about 2 tablespoons of mashed potato and roll into a ball or cylinder.
- Roll each croquette in flour, dip in egg wash, and coat with breadcrumbs. Repeat egg and breadcrumb steps for a thicker crust if desired.
- Heat oil to 350°F and fry croquettes for 3-4 minutes until golden brown. Drain on paper towels.
- Garnish with fresh parsley and grated cheese. Serve warm.
Notes
Always fry a single croquette first to check seasoning and binding. If it falls apart, add more flour and chill before retrying. For a lighter version, bake at 400°F for 20 minutes, turning halfway.
