Description

These Protein Muffins are soft, naturally sweet, and packed with satisfying nutrients. Made with bananas, oats, eggs, and Greek yogurt, they are perfect for busy mornings, meal prep, or a healthy snack that keeps you energized throughout the day.


Ingredients

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 cup Greek yogurt
  • 1 1/2 cups oats or oat flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon honey or maple syrup optional
  • 1/4 cup chocolate chips or berries optional

Instructions

  1. Preheat oven to 350°F and prepare a muffin tin with liners or lightly grease it.
  2. Mash the ripe bananas in a large mixing bowl until smooth.
  3. Add eggs and Greek yogurt and mix until fully combined.
  4. Stir in oats or oat flour, baking powder, and salt.
  5. Add honey or maple syrup if desired.
  6. Fold in chocolate chips, berries, nuts, or seeds if using.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 18–22 minutes or until the centers are set and a toothpick comes out clean.
  9. Allow the muffins to cool before serving or storing.

Notes

Use very ripe bananas for the best sweetness and texture. Avoid overmixing the batter. Store in an airtight container or freeze for meal prep.
