This Pumpkin Pie Mimosa is the ultimate festive twist on the classic brunch cocktail. With cozy pumpkin pie flavors, warm spices, and sparkling champagne, it’s the perfect Thanksgiving drink to kick off the holiday with a little bubbly celebration. Light, fun, and indulgent, this pumpkin spice cocktail is as easy as it is impressive.


Ingredients

  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons granulated sugar
  • 1/2 cup water
  • 1 bottle brut champagne (dry, not sweet)
  • Optional: whipped cream
  • Optional: cinnamon sugar for rimming

Instructions

  1. In a saucepan, combine pumpkin puree, pumpkin pie spice, sugar, and water. Heat gently until sugar dissolves and mixture is smooth.
  2. Strain mixture through a fine mesh sieve for a silky pumpkin juice base.
  3. Prepare cinnamon sugar rimming mix. Wet champagne flute rims and dip into mixture.
  4. Add 2–3 tablespoons of pumpkin juice base into each champagne flute.
  5. Slowly top with chilled brut champagne and stir lightly.
  6. Garnish with whipped cream if desired.
  7. Serve immediately while bubbly and fresh.

Notes

For a family-friendly version, replace champagne with sparkling apple cider. Pumpkin juice base can be made up to 3 days in advance and stored in the refrigerator. Always add champagne just before serving to keep it fizzy.
