Ingredients
- 1 pound lean ground beef
- 1 egg
- 1 small onion, finely chopped
- 1/3 cup breadcrumbs
- 2 tablespoons ketchup
- 1 tablespoon chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup cranberry sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, egg, onion, breadcrumbs, ketchup, parsley, salt, and pepper. Mix just until combined.
- Shape the mixture into 1-inch balls and place them evenly on the prepared baking sheet.
- Bake for 18–20 minutes until browned and cooked through.
- While baking, combine cranberry sauce, brown sugar, ketchup, and lemon juice in a saucepan. Simmer until smooth and glossy.
- Toss the baked meatballs in the cranberry sauce until fully coated.
- Garnish with chopped parsley and serve warm.
Notes
