  • 1 pound lean ground beef
  • 1 egg
  • 1 small onion, finely chopped
  • 1/3 cup breadcrumbs
  • 2 tablespoons ketchup
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup cranberry sauce
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, egg, onion, breadcrumbs, ketchup, parsley, salt, and pepper. Mix just until combined.
  3. Shape the mixture into 1-inch balls and place them evenly on the prepared baking sheet.
  4. Bake for 18–20 minutes until browned and cooked through.
  5. While baking, combine cranberry sauce, brown sugar, ketchup, and lemon juice in a saucepan. Simmer until smooth and glossy.
  6. Toss the baked meatballs in the cranberry sauce until fully coated.
  7. Garnish with chopped parsley and serve warm.

Notes

You can substitute ground beef with turkey or chicken for a lighter option. For extra flavor, add orange zest or a pinch of cayenne to the cranberry glaze. These meatballs can be made ahead and reheated for parties or stored in the freezer for up to 3 months.
