These Roasted Garlic Mascarpone Mashed Potatoes take the classic comfort food and elevate it with the richness of mascarpone cheese and the sweet, mellow flavor of roasted garlic. Creamy, flavorful, and indulgent, they’re perfect for Thanksgiving, holiday dinners, or any meal that calls for a comforting side dish.
Ingredients
- 3 pounds Yukon Gold potatoes, peeled and cut into chunks
- 1 bulb garlic
- 2 tablespoons olive oil (for roasting garlic)
- 1 cup mascarpone cheese
- 1/2 to 3/4 cup warm milk
- 2 tablespoons fresh chives or thyme, chopped
- Fine sea salt to taste
Instructions
- Preheat oven to 400°F. Slice the top off a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
- Meanwhile, place potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15–20 minutes. Drain well.
- In a small bowl, mash roasted garlic cloves and mix with mascarpone cheese and warm milk until smooth.
- Mash the potatoes using a ricer or masher until smooth.
- Fold in the mascarpone mixture and fresh herbs until creamy and well combined.
- Season with salt to taste and serve warm.
Notes
Make ahead by preparing up to two days in advance. Store in the refrigerator and reheat with an extra splash of milk before serving. Best enjoyed fresh, but can be refrigerated for up to 4 days.
