Description

If you are looking for a simple yet impressive dinner side, this Roasted Sunchokes recipe is exactly what you need. These golden bites are crispy on the outside, soft inside, and packed with a slightly nutty, sweet earthy flavor that transforms any meal.

Ingredients

Scale
  • 500g sunchokes (Jerusalem artichokes)
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: carrots or potatoes

Instructions

  1. Preheat oven to 200°C.
  2. Wash sunchokes thoroughly and cut into evenly sized pieces without peeling.
  3. Place in a mixing bowl and add olive oil, garlic, thyme, salt, and pepper.
  4. Toss well to coat evenly.
  5. Spread on a baking sheet in a single layer.
  6. Roast for 25–30 minutes, turning halfway through.
  7. Remove from oven, let rest a few minutes, and serve warm.

Notes

Avoid overcrowding the pan to keep them crispy. Cooking thoroughly helps reduce gas. Add lemon juice or herbs like rosemary or parsley for extra flavor.
